The artichoke is a magnificent plant that can reach 1.5 m in height. The flower buds are a true delicacy: they are harvested between November and December, before they bloom the following spring. It is also a medicinal plant said to have a detoxifying effect. If you do not harvest the flower buds, the artichoke will thank you by producing breathtaking flowers in spring. It originates from the Mediterranean basin.

Growing instructions

Rich, deep, well-drained soils. Sow from February to April in pots under cover for planting once the risk of frost has passed. It is also possible to plant it in autumn in temperate regions, with sowing in pots during July.

A distance of one meter around each plant should be respected when planting. In general, the artichoke does not produce flowers in the first year. It fears frost without protection: cut back the stems to ground level in November and shorten the largest leaves. Earth up the base with soil without covering the heart, and protect with a good mulch.

Its flowers, also called flower heads, are harvested immature for consumption. It is a perennial plant that is often grown for two or three years, as the size of the flowers tends to decrease over time.
