Green Anise

Green anise is one of the oldest and most beloved aromatic plants in the world. Its small, fragrant seeds with their mild aniseed aroma lend an incomparable delicacy to herbal teas, breads, biscuits and liqueurs. Easy to grow in full sun in well-drained soil, it also attracts bees and butterflies with its pretty white summer umbels. Sow it in spring… and let it captivate you until autumn!
Sow from April in rows 30 cm apart. Thin young shoots to approximately 15 cm. Harvest in August-September: as soon as the seeds start to turn brown, cut the whole umbels and hang them upside down to dry in a dry and airy place. Rub between the hands to release the seeds, and separate from the stems using a sieve. Store in a cool and dry place.
