Was in der Schweiz das Rüebli ist in Deutschland und Österreich die Möhre oder Karotte. Das knackige und vitaminreiche Wurzelgemüse ist ein Klassiker im Gemüsegarten und hat viel Potenzial in der Küche. Dass Karotte nicht gleich Karotte ist, merkt schnell, wer sich durch die verschiedenen Sorten klickt. Es gibt sie in vielen Varianten von weiss über gelb bis orange und in ebenso vielen Geschmacksnoten von süsslich-mild bis kräftig-aromatisch. Das Rüebli-Jahr beginnt in den Gartenbeeten mit den zartschmelzenden Frühkarotten und endet mit den währschaften Lagerkarotten, die im Keller über die Wintermonate haltbar sind.

Karotten SELBER SÄEN – SO GEHT’S

Botanischer Name: Daucus carota

Karotten säen: Die Aussaat jener Sorten, die mit «Frühkarotten» gekennzeichnet sind, erfolgt ab Mitte März, Lagerkarotten sät man in der Regel ab Juni bis in den Juli hinein. Gesät wird in Reihen von 30 – 40 cm Abstand direkt ins Freiland oder in einen genügend grossen Topf. Die Saat erfolgt ca. 1 cm tief. Sobald die ersten Rüebli spriessen, dünnt man sie aus, so dass der Abstand zwischen den einzelnen Pflanzen rund 5 cm beträgt. Den Boden vor der Ansaat etwas lockern, damit die Wurzeln sich optimal entfalten können. Ist ein Standort nicht ideal, schafft eine Dammkultur mit locker aufgeschütteter Erde Abhilfe. Alternativ dazu lässt sich der Boden durch Einarbeiten von Kompost und etwas Sand verbessern. Karotten säen stellt die Geduld zuweilen auf die Probe: Es kann bis zu drei Wochen dauern, bis erstes Grün spriesst.

Pflege: einmal ausgedünnt, brauchen die Karotten kaum Pflege bis zur Ernte. Einzig aufkommende Beikräuter müssen entfernt und der Boden rund um die Karotten locker gehalten werden. Ein feinmaschige Gemüseschutznetz über den Saaten verhindert den Befall mit Möhrenfliegen.

Gute Partner für die Mischkultur: Ein bewährtes Team sind Karotten und Zwiebeln («Möhre schützt vor Zwiebelfliege – Zwiebel schützt vor Möhrenfliege»). Ebenso passen Erbse, Knoblauch, Salat, Lauch, Mais, Paprika oder Zucchetti.

This old heirloom variety has been maintained by the rural women of Küttiger for generations. Once you taste it, you will know why they propagated it year to year. The tapered root has a very intense flavour that livens the taste buds. It is known for healthy foliage above its tapered root that is quite wide on the top and pointy on the bottom. It is an old proven variety with much flavour. After trying it, you might not be able to eat carrots from the supermarket again.
