Root parsley is a common root vegetable in the Balkans. The white, tapered root can be prepared as a salad or as a vegetable. It gives stews in winter an aromatic touch. The leaves should be used like typical parsley.
Sowing from May to beginning of July in rows with a distance of 30cm. Do not add fresh compost. Store the harvest in the cellar from October, or continuously harvest throughout winter. The roots do not freeze to death (Attention: mice.)
