C'est l'été. Il fait chaud. Les premiers concombres sont mûrs et on se réjouit déjà de la première salade rafraîchissante. Et là c'est le drame: les concombres sont amers et absolument indigestes!

Pourquoi les concombres sont-ils amers?

Les cucurbitacées (famille des courges, concombres, etc.) ont la capacité de produire naturellement de la cucurbitacine. Ce composé chimique est amer et, s'il est ingéré en grande quantité, peut nous rendre malade. Rendre le fruit indigeste est d'ailleurs le but principal de ce composé! L'objectif de chaque plante est de produire des graines afin d'assurer la survie de l'espèce. L'amertume protège les fruits de potentiels prédateurs comme l'humain. Nous conseillons d'ailleurs de ne pas consommer de fruits amers!

Heureusement, toutes les variétés modernes sont exemptes de cucurbitacine, ce qui rend les fruits comestibles. Néanmoins, l'amertume peut réapparaître sous certaines conditions.

Causes et solutions

La chaleur

La chaleur est la cause principale de l'amertume dans les concombres. La cucurbitacine est résistante à la chaleur et se développe quand la plante est soumise à de fortes températures. Nous conseillons de planter les concombres à un endroit légèrement ombragé, afin de réduire les chaleurs excessives l'été.

Un arrosage irrégulier

Si la plante passe par des périodes de sécheresse et d'irrigation excessive, un stress hydrique est provoqué. Ce stress mène à des concombres amers. Nous conseillons donc d'arroser régulièrement avec un peu d'eau et non un arrosage conséquent mais peu fréquent. Un arrosage avec des ollas est idéal.

Fluctuation des températures

Lorsque les températures varient fortement, par exemple lors de journées extrêmement chaudes et de nuits plus fraîches, de la cucurbitacine est produite. Si les plantes ne sont pas trop exposées au soleil, les variations de températures seront également moins accentuées.

Wieso sind Gurken bitter?

Die Kürbisgewächse (Familie der Kürbisse, Gurken, etc.) haben die Fähigkeit Cucurbitacine zu produzieren. Es handelt sich dabei um einen natürlichen Bitterstoff. In grossen Mengen kann dieser Bitterstoff zu Beschwerden führen. Doch dies ist gerade das Ziel von dieser chemischen Substanz! Jede Pflanze will Samen produzieren, um sicherzustellen, dass neue Pflanzen wachsen können. Durch die Bitterkeit werden die Früchte vor potentiellen Feinden, wie zum Beispiel dem Menschen, geschützt. Wir empfehlen den Konsum von bitteren Gurken nicht!

Zum Glück sind alle modernen Sorten frei von Cucurbitacin, wodurch die Früchte geniessbar sind. Es kann jedoch vorkommen, dass die Bitterkeit zurückkehrt.

Gründe und Lösungen

Hitze

Hitze ist der Hauptgrund für bittere Gurken. Cucurbitacine ist hitzebeständig und entwickelt sich wenn die Pflanzen einem Hitzestress ausgesetzt wird. Wir empfehlen die Gurken an einem leicht schattigen Ort anzubauen. Daher bleibt es ein bisschen Kühler während dem Sommer.

Regelmässig giessen

Wenn die Pflanzen durst haben aber danach zu viel Wasser erhalten, entwickelt sich ebenfalls ein Stress. Die Gurken werden dadurch bitter. Wir empfehlen deshalb regelmässig ein bisschen zu giessen, anstatt einmal zu viel Wasser zu geben.

Temperaturunterschiede

Gurken mögen keine grossen Temperaturschwankungen, da sie dadurch bitter werden. Wenn die Gurken nicht zu exponiert angebaut werden, sind die Temperaturunterschiede auch weniger stark.

Why are cucumbers bitter?

Cucurbitaceae (the family of squashes, cucumbers, etc.) have the ability to naturally produce cucurbitacin. This chemical compound is bitter and, if ingested in large quantities, can make us sick. Making the fruit indigestible is actually the main purpose of this compound! The goal of every plant is to produce seeds in order to ensure the survival of the species. Bitterness protects the fruits from potential predators such as humans. We therefore recommend not to consume bitter fruits!

Fortunately, all modern varieties are free of cucurbitacin, which makes the fruits edible. However, bitterness can reappear under certain conditions.

Causes and solutions

Heat

Heat is the main cause of bitterness in cucumbers. Cucurbitacin is heat-resistant and develops when the plant is subjected to high temperatures. We recommend planting cucumbers in a slightly shaded spot, in order to reduce excessive heat in the summer.

Irregular watering

If the plant goes through periods of drought and excessive irrigation, a water stress is caused. This stress leads to bitter cucumbers. We therefore recommend watering regularly with a little water and not a significant but infrequent watering. Watering with ollas is ideal.

Temperature fluctuations

When the temperatures vary greatly, for example on extremely hot days and cooler nights, cucurbitacin is produced. If the plants are not too exposed to the sun, the temperature fluctuations will also be less pronounced.

Calore
